Like pine nuts, cedar nuts (Pinus Sibirica) belong to the pine family. Large natural populations of cedar nuts grow in Siberia, which is why cedar nuts are sometimes called Russian pine nuts. Cedar nuts differ from pine nuts in shape and taste. Siberian cedar nuts are a little smaller, but more aromatic and intense than pine nuts. Cedar nuts contain vegetable protein and large amounts of unsaturated fatty acids. In the case of Siberian cedar nuts, the fatty acid composition is unique among foods and, although related, is incomparable to pine nuts. Pine nuts have around 35% protein and 50% fat, cedar nuts have 19% protein and 62% fat. What is special about them is the high content of polyunsaturated fatty acids, especially the rare and unusual long-chain fatty acids.

Siberian cedar nuts grow wild and are harvested by hand at Lake Baikal. The cedar trees that grow around Lake Baikal belong to the genus Pinus sibirica.

The cedar tree cones do not contain Pinus armandii nuts and therefore do not cause pine nut syndrome, the so-called pine mouth. After eating certain types of pine nuts, a bitter aftertaste develops in the mouth that lasts for a long time. Everything that is eaten afterwards takes on a bitter taste or an aftertaste of aluminum foil on the tongue.

Use:

The nuts of the Siberian cedar are particularly aromatic and add a touch of refinement to salads, but can also be used in milk drinks or desserts. When lightly roasted, the aroma comes out particularly well in salads.
