Juniper is best known as a flavoring ingredient in gin and other spirits; in almost all of Europe, the berries are used as a natural contrast in game and fatty meat dishes. Juniper is an evergreen, prickly conifer and belongs to the cypress family, but is the only species in the plant family to have edible fruits. The aroma of juniper berries is pleasantly woody, bittersweet and unmistakably reminiscent of gin. Their taste is refreshing, sweet, slightly spicy, with a hint of pine needles and camphor.
Use:
Juniper is particularly popular for sauerbraten, sauerkraut, game dishes or marinades. In ground form, it is also often used as a base for a spice mixture for rubbing into meat

Storage:
Juniper berries should be stored dry and ideally airtight in order to retain their intense aroma for a particularly long time.
