vanilla (ground), bourbon vanilla
Vanilla is an orchid plant and is one of the most expensive spices in the world. Botanically speaking, its pods are fruit capsules of the vanilla plant, which contain many small black seeds and sticky oil. After being harvested in Madagascar, the pods are steamed and dried several times; this is what gives them their typical aromatic taste. Vanilla is part of almost every cake or cookie recipe and many desserts, even outside of the Christmas season. Only the soft pulp that is scraped out is used in baking. Do not throw away the pods; they can be used whole or ground up and mixed with sugar to make vanilla sugar.
