The tonka bean tree, also called tonca tree, is a plant species in the legume family. It is found in northern South America and the seeds of the tree are called tonka beans and are used in cooking. The beans, which smell sweet and are reminiscent of vanilla, are ground up and added to many dishes to sweeten them. Due to the high coumarin content, the tonka bean should only be consumed in small quantities.
