The centaury (also known by its scientific name Centaurea minus) is a plant with delicate green leaves, small red-violet flowers and belongs to the gentian family. The centaury usually reaches a height of around 25 cm and usually grows in moist and sunny locations, such as natural meadows and forest clearings in Europe, Asia Minor, North Africa and North America.
Centaury can be used for more than just making tea. Dried centaury can be added to dressings, sauces or marinades to give many dishes new flavor nuances. Centaury can also be used in warm dishes such as soups or stews. Centaury develops its slightly bitter flavor during cooking.
In addition, the dried leaves of the centaury can be placed in oil to produce a flavorful, slightly bitter oil or used in spice mixtures.

Use of Centaury:

To prepare a centaury tea, add a teaspoon of dried centaury to about 200 ml of cold water, bring to the boil briefly, stir and then strain. Centaury is also included in many herbal tea blends.
