Safflower, also known as safflower, is an ancient cultivated plant that was traditionally grown for personal consumption and used as a dye, food coloring or even as a spice. Today, safflower flowers are mainly grown in parts of the world for their seed oil. Safflower has little aroma, but smells herbaceous, bitter and slightly spicy. Although safflower contains the coloring agents carthamim and safflower yellow, it lacks the important essential oils that could create aroma.
The safflower blossoms color rice, stews and soups a light yellow, but do not achieve the depth of color or the intense, complex aroma of saffron. To color them, the safflower blossoms are added directly to the dish or they are left to steep in warm water beforehand.
Use:
The safflower flowers can be used to decorate desserts, in salads, on ice cream, in soups or in sauces.
Storage:
The safflower flowers should be stored dry and ideally airtight in order to retain the aroma of the safflower flowers for a particularly long time.
