Cloves are dried flower buds from the clove tree. They taste slightly spicy and have a very intense aroma due to the high proportion (up to 25 percent) of essential oils. Please use them sparingly, as they easily overpower other spices. Cloves flavor gingerbread and are indispensable in grog and Feuerzangenbowle. Cloves have an intense scent, with peppery and combative notes. The taste is fruity, but also spicy, peppery and bitter; they leave a numbing feeling on the palate. As with allspice, the typical taste is determined by the eugenol in the essential oil.
Use:
Cloves are the ideal accompaniment to sauerbraten, game and fish dishes. Lentils, red cabbage, desserts, compote, pastries, punch and mulled wine also get their special aroma when cloves are added.Tip: The taste of ground cloves is particularly good in gingerbread.
Storage:
Ground cloves should be stored in a cool, dry place and definitely in glass jars, as the clove oil is quite strong and does not like being packaged in bags. Of course, this is to keep the intense aroma for a particularly long time.
