You can use smoked garlic in your kitchen to season your dishes just like normal garlic. Thanks to its fine and mild aroma, you can use it to refine all kinds of dishes. French smoked garlic has a particularly spicy and smoky taste. Smoked garlic is used like normal garlic, but because it is smoked, it lasts much longer than normal garlic. The fine smoky aroma makes it a special delicacy and has become indispensable in gourmet gastronomy.
Production of smoked garlic:
Growing garlic requires a lot of patience and care. Garlic farmers prepare the garlic clove by clove as early as the end of January. Planting takes place on the first fine day in February. Garlic needs nutrient-rich, dry soil. Until the harvest in July, the farmer often has to go out into the field to weed. Before smoking, the plants are braided by hand. To do this, however, the plant must be harvested completely. It is freed from the soil and all yellowed parts are removed. The braiding must be done before it becomes dry and fragile. The garlic braids are hung in a chimney made of small bricks for smoking. The garlic is smoked using peat from the nearby moor, which is covered with straw and sawdust from selected woods. The smoke allows the garlic to last for up to six months. The secret of harvesting and smoking is still often passed on from father to son, so the color of the cloves often differs from farmer to farmer.
Storage:
The smoked garlic should be stored in a dark, dry place, especially not in the refrigerator to avoid germination or mold.
