Cassia cinnamon has an intense aroma due to its higher proportion of essential oil. It tastes sweet and distinctly peppery with a slightly astringent sharpness. In the USA, cassia cinnamon is preferred over Ceylon cinnamon because of its more pronounced aroma. Ground cinnamon is made from cassia cinnamon or Padang cinnamon and is darker, more aromatic, but also a little bitter. Ground cinnamon is a must in cinnamon stars.
