Valerian or catnip (also known as Valerianae radix) is a perennial plant from the honeysuckle and valerian family. The valerian plant prefers to grow in moist locations such as the banks of rivers or lakes, in wet meadows or light forests where the soil conditions are ideal for growth. In Germany, the valerian plant often grows on damp forest edges or watercourses. Valerian is grown in Lower Franconia, the Harz Mountains or in Holland. The valerian plant is characterized by its spicy-smelling pink inflorescences, which are sometimes used in the same way as the root.
In addition to this use, valerian is also valued as a spice in many kitchens. The dried roots can be made into tea or tinctures and give dishes a pleasant spicy note. The dried valerian plant and valerian root are also used as scented pillows or scented bags in households.

Use:
To make valerian tea, add a heaped teaspoon to about 180ml of cold water, cover and bring to the boil, then allow to steep, covered, for about 15 minutes.
