The passion for growing Espelette peppers is often compared by farmers to growing grapes, because just like the vine, the chili peppers give back to the land, that is, the characteristics of the land where the chili peppers have taken root largely determines its characteristics. Only, compared to growing grapes, farmers have to replant every year. The seeds are collected from one year to the next. This allows farmers to remain independent for the cultivation of chili peppers and ensures optimal traceability and quality. In Atxania, the land is cultivated following a crop rotation: every three years something other than chili is grown, for example corn or meadows. This makes it possible not to tire the earth and to regenerate the soil. Three seedlings are moved from February to March using modern techniques such as the heating mat and the greenhouse, which guarantee average and stable temperatures. From April, the chilli peppers are planted in potting soil. It then reaches 3 centimetres and has 2 small leaves. The plants remain in the greenhouse for a month and a half, developing and gaining strength. From the end of April to the beginning of May, the planting of chilli peppers on mulch begins. Watering is minimal and is only permitted in the month after planting. This forces the plant to extract the nutrients it needs from the soil for its growth and brings out its special characteristics. From August 15th, we can finally harvest the ripe fruit. The harvest is done manually, with the family and with the help of some seasonal workers. The numerous awards given at the Paris Agricultural Show testify to the pursuit of optimum quality.
